  4. Cook undisturbed for 4 minutes to let the bottoms turn golden, then stir and continue cooking for 4 to 5 more minutes, until crisp on the outside and tender when pierced with a fork.
  5. Add the diced zucchini, bell pepper, and onion to the skillet with the potatoes, along with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  6. Cook, stirring occasionally, for 6 to 7 minutes, until the vegetables are tender and lightly browned at the edges.
  7. Stir in the minced garlic and 1 teaspoon Italian herb blend and cook for 30 seconds, until fragrant.
