  4. Heat 1 tablespoon olive oil or butter in a small nonstick skillet over medium heat for 1 minute, until it shimmers or the butter foams.
  5. Crack both eggs directly into the skillet, spaced apart, and immediately reduce heat to medium-low.
  6. Cook undisturbed for 2 to 3 minutes, until the whites turn from clear to fully opaque and set around the edges, while the yolk still looks glossy and jiggles when the pan is nudged.
  7. Sprinkle the eggs with the remaining 1/8 teaspoon salt, black pepper, and the red pepper flakes if using.
  8. For a fully set white with a still-runny yolk, cover the skillet with a lid for the last 1 minute of cooking to steam the tops; for a firmer yolk, cook 1 to 2 minutes longer.
  9. Spread the mashed avocado generously over 2 slices of the toasted bread, dividing it evenly.
  10. Top each with a slice of tomato and a small handful of arugula, then carefully slide a fried egg on top of each using a thin spatula.
