  1. Preheat the oven to 300 degrees F and line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, combine the 3 cups oats, 1 cup chopped nuts, 1/2 cup coconut, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt, stirring until evenly mixed.
  3. In a small bowl or measuring cup, whisk together the 1/2 cup honey, 1/3 cup melted coconut oil, and 1 teaspoon vanilla until smooth.
  4. Pour the honey mixture over the oat mixture and stir thoroughly with a spatula, pressing and folding until every piece of oats and nuts looks glossy and evenly coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer, pressing it down firmly with the back of the spatula to compact it into a thin, solid slab; this helps form bigger clusters.
  6. Bake for 15 minutes, then remove from the oven and use a spatula to flip large sections without fully breaking them up, keeping clusters intact.
  7. Return to the oven and bake for another 12 to 15 minutes, until deeply golden brown all over and fragrant; the granola will still feel slightly soft in the center but will crisp up as it cools.
  8. Remove from the oven and let the granola cool completely on the baking sheet, undisturbed, for at least 30 minutes; do not stir during cooling, since this is what allows large crunchy clusters to form.
  9. Once fully cooled and hardened, break the granola into clusters of your desired size and stir in the 1/2 cup dried cranberries.
  10. To assemble parfaits, layer about 1/2 cup Greek yogurt, 1/4 cup granola, and 1/3 cup fresh berries in a glass, repeating the layers once more.
  11. Serve immediately so the granola stays crisp, or store leftover granola in an airtight container at room temperature for up to 2 weeks.

Tips

Letting the granola cool completely without stirring is the single most important step for getting large, crunchy clusters instead of loose crumbs.
Assemble parfaits just before eating; granola left sitting in yogurt for more than a few minutes will soften.
