  1. Mash half of the banana in a medium bowl with a fork until mostly smooth with a few small lumps.
  2. Add the 1 cup oats, 1 cup milk, 1/2 cup Greek yogurt, 2 tablespoons peanut butter, 1 tablespoon honey, 1/2 teaspoon vanilla, 1 tablespoon chia seeds, and the pinch of cinnamon to the bowl with the mashed banana.
  3. Stir everything together with a spoon for about 1 minute, until the peanut butter is fully incorporated and no dry oats remain visible at the bottom of the bowl.
  4. Divide the mixture evenly between two jars or airtight containers with lids.
  5. Slice the remaining half banana and press the slices gently into the top of the oats in each jar.
  6. Seal the jars and refrigerate for at least 4 hours, or overnight, until the oats have absorbed the liquid and softened into a thick, spoonable, pudding-like texture.
  7. Check doneness by tilting a jar gently; properly set oats will barely shift and look creamy and cohesive rather than soupy or watery.
  8. Before serving, stir each jar well; if the oats seem too thick, loosen with a splash of milk, 1 tablespoon at a time.
  9. Top with the chopped roasted peanuts just before eating for crunch, and enjoy cold, straight from the jar.

Tips

Chia seeds thicken as they soak, so stir in an extra splash of milk in the morning if the oats seem stiff.
Make three or four jars at once on Sunday for a grab-and-go breakfast all week; they keep well refrigerated for up to 4 days.
