  3. Add the par-cooked sweet potatoes in a single layer and cook undisturbed for 4 minutes, until the bottoms are deeply golden and crisp.
  4. Stir and continue cooking for 5 to 6 more minutes, stirring only occasionally so the potatoes have time to brown, until fork-tender with crisp edges all over.
  5. Push the sweet potatoes to one side of the skillet, add the remaining 1 tablespoon oil to the empty side, then add the diced bell pepper and onion.
  6. Cook the pepper and onion for 4 to 5 minutes, stirring occasionally, until softened, then stir in the minced garlic, 1 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon of the salt, and 1/4 teaspoon black pepper; cook for 30 seconds until fragrant.
  7. Mix everything together in the skillet, then add the drained black beans and cook for 2 to 3 minutes, stirring, until the beans are heated through.
  8. Using a spoon, make 4 small wells in the hash and crack one egg into each well.
  9. Sprinkle the remaining 1/4 teaspoon salt over the eggs, cover the skillet with a lid, and reduce heat to medium-low.
  10. Cook for 4 to 5 minutes, until the egg whites are completely set and opaque but the yolks are still soft and jammy when you nudge them; cook 1 to 2 minutes longer for firmer yolks.
  11. Remove from heat, scatter the chopped cilantro over the top, and serve directly from the skillet with lime wedges for squeezing.
