Ingredients

Instructions

  1. In a large bowl, whisk together 1 1/2 cups flour, 2 tablespoons sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt until no lumps remain.
  2. In a separate medium bowl, whisk the 1 1/2 cups buttermilk, 2 eggs, 3 tablespoons melted butter, and 1 teaspoon vanilla until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir with a rubber spatula just until combined; the batter should look thick and slightly lumpy. Do not overmix or the pancakes will turn out tough. Let the batter rest for 5 minutes so it thickens slightly.
  4. Set a large nonstick skillet or griddle over medium-low heat for 2 minutes, then add 1/2 teaspoon butter and swirl to coat.
  5. Test the pan is ready by flicking a drop of water onto it; it should sizzle and dance, not evaporate instantly.
  6. Using a 1/4-cup measure, pour 3 pancakes into the skillet at a time, spacing them 2 inches apart. Scatter a few blueberries onto each pancake now if using.
  7. Cook for 2 to 3 minutes, until bubbles form across the surface and pop, leaving small holes, and the edges look matte and dry, not shiny.
  8. Flip each pancake with a thin spatula in one confident motion and cook the second side for 1 to 2 minutes more, until golden brown and the pancake springs back when pressed lightly in the center.
  9. Transfer cooked pancakes to a plate and tent loosely with foil to keep warm; wipe the skillet with a paper towel and add a touch more butter between batches.
  10. Repeat with the remaining batter, adjusting heat down slightly if pancakes are browning too fast before the centers set.
  11. Serve warm stacked three or four high, with maple syrup and extra berries on the side.

Tips

Resting the batter for 5 minutes lets the flour hydrate fully, giving a fluffier crumb.
If you do not have buttermilk, stir 1 1/2 tablespoons lemon juice into 1 1/2 cups regular milk and let it sit for 5 minutes before using.
