  1. Preheat the oven to 425 degrees F and line a large rimmed baking sheet with parchment paper or foil.
  2. Place the broccoli, bell peppers, and red onion on the baking sheet and toss with 2 tablespoons of the olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
  3. Spread the vegetables into a single layer, giving them room to roast rather than steam, and roast for 10 minutes.
  4. While the vegetables roast, pat the shrimp dry with paper towels and toss in a bowl with the remaining 1 tablespoon olive oil, smoked paprika, garlic powder, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon black pepper.
  5. After the vegetables have roasted for 10 minutes, remove the pan from the oven and push the vegetables to the sides to make room in the center.
  6. Scatter the seasoned shrimp in a single layer in the center of the pan.
  7. Return the pan to the oven and roast for 6 to 8 minutes more, until the shrimp turn from gray and translucent to pink and opaque and curl into a loose C shape, and the vegetables are tender with lightly charred edges.
  8. If any shrimp are still gray or translucent in the center after 8 minutes, roast for 1 to 2 more minutes, checking often since shrimp overcook quickly and turn tough and rubbery.
  9. Remove the pan from the oven, squeeze fresh lemon juice over everything, and sprinkle with chopped parsley.
  10. Serve directly from the pan or divide among plates, with extra lemon wedges on the side.

Tips

Cutting the vegetables into similar-size pieces helps everything finish roasting at the same time.
Adding the shrimp partway through instead of at the start keeps them from overcooking while the vegetables catch up.
