Instructions
Set an oven rack in the middle position and preheat the oven to 400 degrees F; line a rimmed baking sheet with foil or parchment for easy cleanup.
Pat the salmon fillets completely dry with paper towels; wet fish steams instead of browning, so do not skip this.
Place the fillets on the prepared baking sheet, spaced at least 1 inch apart, and rub the olive oil evenly over the tops.
In a small bowl, stir together the melted butter, minced garlic, lemon juice, salt, pepper, and oregano.
Spoon the butter mixture evenly over each fillet, then lay 2 to 3 lemon slices on top of each piece.
Slide the baking sheet into the oven and bake for 12 to 15 minutes, checking at the 12-minute mark.
The salmon is done when it flakes easily with a fork at the thickest part and a food thermometer inserted into the center reads 145 degrees F; thin fillets will finish closer to 12 minutes and thick center-cut fillets closer to 15.
Remove the pan from the oven and let the salmon rest on the sheet for 2 minutes; it will keep cooking slightly from residual heat.
Transfer the fillets to plates, spoon any remaining pan juices over the top, sprinkle with chopped parsley, and serve immediately.
Tips
If your fillets vary in thickness, start checking the thinner ones a couple minutes early so they do not overcook.
No thermometer? Press gently on the thickest part with a fork; if it separates into opaque flakes instead of looking translucent and jelly-like, it is done.
