  3. Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  4. Add the ground chicken, breaking it into small crumbles with a spatula, and cook for 6 to 7 minutes, stirring frequently, until no longer pink and cooked through to 165F.
  5. Add the sliced shallot to the skillet and cook for 1 to 2 minutes, just until softened and slightly translucent.
  6. Remove the skillet from heat and let the chicken cool for about 3 minutes; adding the dressing while it is too hot can wilt the herbs too much once mixed in.
  7. Pour the lime-fish sauce dressing over the warm chicken and toss well to coat everything evenly.
  8. Stir in half the mint, half the cilantro, and the scallions, along with 2 tablespoons of the toasted rice powder, tossing to combine.
  9. Taste and adjust with more fish sauce, lime juice, or red pepper flakes until the flavor is bright, salty, and a little spicy.
  10. Transfer the larb to a serving platter, top with the remaining mint, cilantro, and toasted rice powder, and serve with butter lettuce leaves and cucumber slices for wrapping and scooping.
