  2. Season both sides of the cutlets with 3/4 teaspoon salt and the pepper, then dredge each piece lightly in flour, shaking off the excess.
  3. Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat until the butter foams and the oil shimmers.
  4. Working in batches so you do not crowd the pan, cook the cutlets for 3 to 4 minutes per side until golden brown and cooked through to 165F. Transfer to a plate and tent with foil; add the remaining 1 tablespoon oil between batches if the pan looks dry.
  5. Reduce the heat to medium and add the garlic to the same skillet, stirring for 30 seconds until fragrant but not browned.
  6. Pour in the chicken broth and lemon juice, scraping up the browned bits from the bottom of the pan with a wooden spoon; these bits are packed with flavor.
  7. Bring the liquid to a simmer and cook for 4 to 5 minutes, until it reduces by about a third and looks slightly syrupy.
