  1. Bring a large pot of salted water to a boil, cook the egg noodles according to the package directions until al dente, then drain and set aside.
  2. While the water heats, pat the sliced beef dry with paper towels and season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  3. Heat 1 tablespoon of the butter in a large skillet over medium-high heat until it foams and just begins to brown.
  4. Sear the beef in a single layer for 1 to 2 minutes per side, until browned on the outside but still slightly pink in the center; transfer to a plate (it will finish cooking later).
  5. Add another tablespoon of butter to the skillet, then add the mushrooms and onion, cooking for 6 to 7 minutes, stirring occasionally, until the mushrooms release their liquid and it evaporates, leaving them browned.
  6. Stir in the garlic and cook for 30 seconds until fragrant.
  7. Add the remaining 1 tablespoon butter and sprinkle the flour over the vegetables, stirring constantly for 1 minute to cook off the raw flour taste.
  8. Slowly pour in the beef broth while whisking constantly, then bring to a simmer and cook for 4 to 5 minutes until the sauce thickens enough to coat the back of a spoon.
  9. Reduce the heat to low, stir in the Dijon mustard and sour cream until smooth, and season with the remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper.
  10. Return the seared beef and any accumulated juices to the skillet and simmer gently for 2 to 3 minutes, just until the beef is cooked through with no pink remaining; do not let the sauce boil or the sour cream may curdle.
  11. Serve the stroganoff spooned over the cooked egg noodles, garnished with fresh parsley.

Tips

Sear the beef only partway during the first step; it finishes gently in the sauce so it stays tender instead of turning tough and chewy.
Keep the heat low once the sour cream is added and never let the sauce come to a full boil, which can cause it to separate.
