  2. In a medium bowl, stir together the Greek yogurt, 1/3 cup honey, and vanilla extract until smooth and evenly sweetened.
  3. Pour the yogurt mixture onto the prepared baking sheet and spread it into an even layer about 1/4 to 1/2 inch thick using an offset spatula.
  4. Scatter the fresh berries evenly over the surface, pressing them gently so they stay put.
  5. Sprinkle the granola, mini chocolate chips, shredded coconut, and salt evenly over the top.
  6. Drizzle the extra tablespoon of honey over everything in thin lines.
  7. Carefully transfer the baking sheet to the freezer, keeping it as flat as possible, and freeze for at least 3 hours, or until completely solid and firm to the touch.
  8. Once frozen solid, break the bark into 8 irregular pieces using your hands or the tip of a knife.
  9. Serve immediately straight from the freezer, as the bark softens quickly at room temperature.
  10. Store any remaining pieces in an airtight container or zip-top bag in the freezer for up to 1 month.

Keep the tray perfectly flat while it freezes; a tilted sheet makes the yogurt layer uneven and some pieces thinner than others.
