  1. Place your ice cream maker's freezer bowl in the freezer at least 24 hours before you plan to churn, if it is not already frozen solid.
  2. In a small saucepan, combine the sugar and water and heat over medium heat, stirring, until the sugar fully dissolves and the liquid looks clear, about 3 minutes; this is your simple syrup.
  3. Remove the syrup from the heat and let it cool to room temperature, about 15 minutes.
  4. Place the mango chunks, cooled syrup, lime juice, lime zest, corn syrup, and salt in a blender.
  5. Blend on high for 1 to 2 minutes, until completely smooth with no visible fibrous bits, stopping to scrape down the sides if needed.
  6. Taste the puree; it should taste slightly sweeter than you want the final sorbet, since freezing dulls sweetness. Add an extra teaspoon of lime juice if it tastes flat.
  7. Cover the puree and refrigerate for at least 2 hours, or until thoroughly chilled; churning warm puree will not freeze properly in the machine.
  8. Pour the chilled puree into your ice cream maker and churn according to the manufacturer's instructions, typically 20 to 25 minutes, until the sorbet thickens to the texture of soft-serve and holds its shape when you lift the paddle.
  9. Transfer the churned sorbet to a freezer-safe container, pressing a piece of parchment or plastic wrap directly onto the surface to prevent ice crystals.
  10. Freeze for at least 4 hours, or until firm enough to scoop.
  11. Let the sorbet sit at room temperature for 5 minutes before scooping if it is very firm.

Tips

Using very ripe, fragrant mangoes makes the biggest difference in flavor; underripe mango produces a duller, less sweet sorbet even with extra sugar.
Chilling the puree completely before churning is essential; the ice cream maker cannot remove enough heat on its own to get a smooth, scoopable texture.
