  2. Place the wedges in a large bowl, add the olive oil, and toss until every piece is glossy and evenly coated.
  3. Sprinkle in the salt, cinnamon, smoked paprika, and black pepper, then toss again until the spices are evenly distributed.
  4. Preheat the air fryer to 380F for 3 minutes.
  5. Arrange the wedges in the basket in a single layer with a little space around each piece, skin-side down when possible; cook in two batches for a smaller basket rather than stacking wedges on top of each other.
  6. Air fry at 380F for 9 minutes, then open the basket and flip each wedge with tongs.
  7. Continue air frying for another 7 to 9 minutes, checking at 7 minutes, until the wedges are deeply caramelized and golden-brown at the edges with visible dark spots.
  8. Test doneness by piercing a wedge with a fork; it should slide in easily with almost no resistance, and the exterior should look dry and slightly crackled, not shiny and wet.
  9. If any wedges are still firm in the center, return them to the basket for another 3 minutes at 380F.
  10. Transfer to a serving plate, scatter with cilantro or parsley if using, and serve warm.
