  1. Preheat your oven to 400 F and line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk the eggs and granulated sugar together until pale and slightly thickened, about 1 minute.
  4. Whisk in the Greek yogurt, vegetable oil, vanilla, and milk until smooth and well combined.
  5. If using frozen blueberries, toss them with 1 tablespoon of the dry flour mixture in a small bowl to help prevent them from sinking or bleeding into the batter.
  6. Add the dry ingredients to the wet ingredients and fold gently with a spatula until just a few streaks of flour remain; do not overmix, a lumpy batter is exactly right.
  7. Fold in the blueberries with just 2 or 3 more gentle strokes.
  8. Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full, and sprinkle the tops with coarse sugar if using.
  9. Bake at 400 F for 5 minutes, then, without opening the oven, lower the temperature to 350 F and continue baking for 15 to 17 minutes more.
  10. The muffins are done when the tops are golden and spring back when lightly pressed, and a toothpick inserted into the center of a muffin comes out clean or with a moist crumb but no wet batter.
  11. Cool the muffins in the tin for 5 minutes, then transfer to a wire rack to cool for at least 10 minutes more before serving.

Tips

The initial hot blast at 400 F followed by a lower finishing temperature is what gives these muffins their tall, bakery-style domed tops.
Do not thaw frozen blueberries before folding them in, as thawed berries release more juice and can turn the batter purple.
