  10. Nestle the seared chicken (and any accumulated juices) back into the skillet, cover again, and simmer for another 10 to 12 minutes, until the rice is tender and most of the liquid is absorbed and the chicken reaches 165 degrees F.
  11. Stir in the frozen peas and let them sit, covered, off the heat for 5 minutes to warm through.
  12. Remove and discard the bay leaf, fluff the rice mixture gently with a fork, sprinkle with chopped parsley, and serve straight from the skillet.
